I ran into this same issue just the other day for the first time installing a new box. I thought I was going insane. Randy, out of curiosity, what kind of NICs do you have in this box?

click save I have to hop on the console and add the default route back -
netstat shows the default route is gone. I then added yet another i'face,
clicked save then had to go add the default route again.

Nothing serious, just thought you'ld like to know.
