According to the Alcohol Yield tables in the Mother Earth Alcohol Fuel Manual, Jerusalem artichokes yield 20 gallons of 99.5% ethanol per ton, and 1,200 gallons per acre. Yield per acre is calculated on three harvests of heads per year. Comparative yields are 889 gal/acre for sugar in Hawaii, 555 gal/acre for sugar in Louisiana, and 79 gal/acre for wheat (sugar and wheat yields USDA Ag. Stat. 1978).
