What are you talking about?

   * The symfony book has been updated for symfony 1.1
   * The cookbook has also been updated
   * We've added more chapters to the cookbook
   * The form framework has a dedicated book
   * And I'm updating the "My first project" tutorial for 1.1

The symfony 1.1 documentation is at the same level as the 1.0 one.

P.S.: By the way, the askeet tutorial is not even compatible with 1.0.
