you override the functions then you can provide alternative
directories but not alternative mechanisms like e.g. the syslog.

The method does not decide *how* the logs are written. It decide what
the /kernel.log_dir/ parameter is. And this parameter is then used to
configure Monolog by default (you can even change the path in the
Monolog configuration without changing the parameter in the kernel)
