I have done some (non-Mac) programming in the past, but can't find the time now...
I may be different to everyone else, but I'm sure true gamers (I have two teenage sons :) have no interest in old platforms.
Therefore, I think your efforts are going in the wrong direction. Those of us still supporting OS 6 and early Macs are probably trying to do productivity things with our Macs.
So my suggestion would be:
1) modify MACTCP so that it can interface with a modern DHCP server.
2) A ssh TelNet client for OS 6.
3) AIM online chat?????? I could sell my sons on that one and an SE/30 each.
but, of course YMMV :-)
