Hypercard also comes to mind as a seriously useful tool.
I've also heard that some graphic designers like utilize the constraints inherent in small screen black and white for designing bit mapped icons. (business cards, post cards etc.) No distracting internet.
At least one [published] author I know is writing his current novel on a powerbook 100. I think for similar reasons. No distractions. [as long as he doesn't read the next paragraph]
Then there are the old games made for Black and White screens and system 6. Beware of RISK! it can be quite addicting when deadlines loom!
