Supposedly it's possible, but probably not in vMac...

I've tried Lido, Europa HD Formatter, APS, Fast Formatter, HD Util, 
SCSI Tool, and Apple HD SC.  None of them see these disks, presumably 
because, regardless of image size, vMac is emulating these images as 
being floppydisks, not SCSI drives.

Oh well, no big deal.
