+1, so we shouldn't map it (well, unless we are sure of course)

If the produce tag is generic enough you can be certain what the produce will 
be, but not certain what the product will be.
So you can tag the produce as the planting takes place (or after), but not the 
product.

produce=timber, if defined as cut down trees and cut up parts of trees,
can be used as the  output of a forest no mater what processes are applied 
later to the produce to make any kind of product.
