Installing Tails on a USB from a Tails DVD doesn't compromise Tails
security. But if you do all that in a VM in Windows, then you're not
doing it in a trustworthy environment.

You should directly boot your computer on your Tails DVD do do so.

Actually, apart from VPNs which don't provide stronger anonymity than
Tor network, every tools you might need for end-to-end encryption
concerning email or chat are already included in Tails. Which is free by
the way :)
