Installing Tails on a USB from a Tails DVD doesn't compromise Tails security. But if you do all that in a VM in Windows, then you're not doing it in a trustworthy environment. Actually, apart from VPNs which don't provide stronger anonymity than Tor network, every tools you might need for end-to-end encryption concerning email or chat are already included in Tails.
