In that specific case (7.5T), which is the most common, it would be hgv=no, as that is the defining maximum authorised mass for an HGV. I'd consider maxweight, for higher limits.

The traditional UK term is Gross Weight, but the, more scientifically correct, term now used, in formal documents, is Maximum Authorised Mass.

Note that the GVM for which the sign applies is given explicitly on the
sign, which is apparently always the case for any HGV-access-restriction
sign in the UK.
