Hi, I've been wondering the same for quite a long time, but I noticed that Tilemill is very good if you want to reder things for debugging purposes. I've made a blog post about getting data in tilemill and one about rendering in TileMill. It's for Ubuntu 11.04 or a derivated distro, but if you know your distro package names, you can adapt it to any Linux distro.

But if you look at the /usr/share/osm2pgsql/default.style file, you see an example to include bycicle routes.
