Hi I don't think there is that many... I have seen the Riversdale one yesterday purely by chance. I agree that they are worth mapping whether they warrant a way is debatable but I am sure the owners of the various signs would want them to be as prominent as possible, and ideally would like them rendered on maps. I would personally tag such signs with a node, for example the cross found on a hill in Rustenburg is very prominent visible in the night from the ground but because it is vertical is not clearly visible from the imagery. I would through it out to the wider OSM community. The other side is also that if there is enough usage of a set of tags then it becomes the norm.
