Good idea and some thoughts: They are definitely landmarks. Normally there is not mauch else where they are. Therefore definitely cartographic value.
They may be South African only, not sure. Would be interesting to hear once you start the process. I like the idea of using ways and areas to depict them and points to start off with. Many objects can be defined as both points and areas (and lines). Refer "Element" column on http://wiki.openstreetmap.org/wiki/Map_Features There are major man-made pictures going back thousands of years. http://en.wikipedia.org/wiki/Nazca_Lines in Peru and hundreds of meters in size. Not quite the same reason for making them but a similar concept from a mapping perspective and perhaps this or something similar could be used.
