Nick,

All you have to do to empty the trash folder is to move to it without tabbing into the message list, open the context menu, and there will be an Empty Trash option.

And with a POP account, unless you've specifically configured it to leave copies on the server they are removed when you get your mail, which is downloaded to your computer when using a client like Thunderbird instead of a web based client.
