With Window-Eyes you can use Firefox up through version 55.03, but not 56.0.
NVDA and JAWS should work fine with these newer Firefox versions.
I don't know whether it would be productive to put a bug report into the Firefox bug reporting system about Window-Eyes support or not.

You can tell it not to update. I think if the new versions of Firefox isn't
working with Window-Eyes, it is a clear sign that Window-eyes is failing
with the new updates. I use JAWS and NVDA and both work fine with the new
updates because both of these products are being updated.
