Sorry, but I don't know what to say. I knew the new version isn't as
accessible. So I've just been saying no to the update. But eventually
the old version is just going to stop working. At least that's what it
said today instead of just prompting me to install the update.
The only other thing I can think of is to restore a system backup if you
have one.

NVDA has nowhere near the control and flexibility of Window-Eyes. You can
read the entire user's guide pretty quickly. It's the first option in the
help pulldown.
Unless I somehow missed it there's no control over the cursor keys.
Configuration profiles are the equivalent of set files.
