PNGs suitable for large (!) printouts are already at http://labs.geofabrik.de/haiti/large-png-maps/. I have also e-mailed Jochen Plumeyer separately asking for specific PDF requirements. He seems to desire small and simple PDFs and this is something neither Osmarender nor Mapnik are very good at - you tend to get giant PDFs that take ages to render even on a proper PDF viewer. If someone has time on their hands they could try to create a really simplistic map style for either Mapnik or Osmarender taht would only show the bare minimum required on the ground (e.g. no road casings etc) - it might be possible to create simple PDFs with that then.
