Things could be made a little bit better if people trimmed away the
unnecessary material in their emails, but this wouldn't completely solve
the problem you're facing, and it would mean a lot of extra work for
everyone else that would be of little to no value for most people
following the mailing list.

You might consider not using digest mode and using the web based mobile
interface for GMail. It does such a good job of handling exactly the
situation you've described, that it's become my default way of managing
emails on my phone. I generally don't like web based interfaces, but
GMail's is so clean and handles threads and conversations so well, it
more than makes up for the inconveniences of a web based interface, at
least in my opinion!
