I am out 3 nights a week for music. That means..dinner wise...some creative thinking here. We worked it out that 1 quiche lasts two nights for two people (add salad and veg.) and that 1 chicken (free range), already cooked from the shop can work for three meals for two, left overs do well for chicken tacos or burritos, and other chicken surprise items. That leaves only 2 more dinners. We don't use this formula every week because it would be boring but that plus the odd frozen fish fillets (fancy fish fingers) sometimes called (slack dinner night) allows for half way decent meals and hardly any fuss. The pumpkin soup goes for a good while too I might add. Lucky you don't live at our house! Its pathetic but easy.
