You should be able to yes - I actually do all my development work on vista so it definitely works there. The zip file of all the exercises is included in that last set of links, you may have to tweak the instructions slightly for a different environment but I'm sure you can figure that out. The docs (manual and exercise notes) are still going to be correct although the exercise notes refer to a version of eclipse with a few customizations to make life easier which you may not have. Still, shouldn't be an issue at all to an experienced developer - even to those less expert the first section of the manual is about installing and using java + maven along with a simple walkthrough of new project construction from archetypes.
