OK problem solved... Looks like I was using an older version of the
executeworkflow.sh - d'oh!

So I'm not sure if I should be specifying an output directory somewhere? I
thought not, as the REST documentation states that the outputs are stored in
the 'out' subdirectory of the run's working directory - but I don't think
that's being created.
