On the other hand all black text on black background needs to recolor automatically to the white tone. Drives me mad too - I blame the creator of such a mail and would ask him not to use black on black in the future. ;-)
No software should nanny the user. If the sender meant to send black-on-black, he will have his reason. I don't think the software should decide to change the colours, unless instructed by the user.
Note: I do not use themes, and your mail looks here exactly how you intended it to look (I hope).
