Have managed to hide 'Reply' OK here.  Other customising does not seem
to work if one makes more than one change at a time, only the first
change 'sticks'.   Several people complain that they cannot get a 'Mark
as Not Junk' shortcut to stick, I think they try to put it in after
just having entered something for 'Mark as Junk' (as I did
originally). If one enters something for only 'Mark as NOT Junk' and
then saves, the entry will stick, at least it did with me!
