A little update:
At least if I select Unicode (UTF-8), I get the correct encoding:
Content-Type: text/plain; charset=utf-8
Can anyone check UTF-8, Latin 9 and Central European (ISO) encoding

[1] You only have to set the regarding character set, save the
message to outbox and check the headers. — You do *not* need to
send the message.
