Yeah, that works, but still, I would like to be able to send and save
on the fly in cases where no rule can be made to decide what folder
the outgoing mail is to be stored in.

If you have access to a Linux box, install the mailer Postilion. It
has this functionality and I miss it when I come from Linux back
to WinBat (the only reason for me to run Windows these days is The
Bat! and to change ink cartridge for my printer!).
