The reason that PGP knows what -- is, is because it is the standard way
of doing it.
Whatever is used as a delimiter, PGP would need to disable it before the
message is actually signed and sent. Otherwise there is the possibility
that the signature would get delimited somewhere and so render the PGP
signature invalid before it reached it's destination.
The whole point of signing with PGP is to show that the messages when
received is as it was when it was sent.
