 For all templates use: Account -> Properties -> Templates -> Reply and
 choose the style you'd like.  For an individual template, you can use
 the %QUOTESTYLE macro.  For full usage details, check the help file
 under: Help -> Help Topics -> Contents -> Message Templates -> The
 complete list of Template Macros.

Depends where you're using it.  The macro you're looking for is
%CapitalFirst.  Again, this is available in the Complete List.
