The problem is that filters for outgoing mail get triggered after the
mail is sent (i.e. leaves your computer), not when a message is stored
in the outbox.

Usually a sent message goes to the "Sent" folder. With an outgoing mail
filter, you can e.g. put them into different folders where you store
your correspondence with certain people. That's what I use outgoing mail
filters for.
