The reason this happens has something to do with Unix and the fact that the word "from" is used to indicate the end of a message. To prevent the confusion, the GMX Servers add the prefix ">" when the word at the beginning of a sentence does not represent a new message beginning. I'm not explaining it properly, but it's something along those lines. Send yourself a test message, and make sure that one of the sentences in your test message _begins_ with "from"... not capitalised.
