You can determine these settings in Outlook by going to Tools|Options and going to the Other tab. In the General section there is a tickbox for making Outlook the default program for Email, Calendar and Contacts. There is also the setting in IE under Tools|Internet Options and the Programs tab, where you can set these options one by one. I don't know how these two locations interact, if at all.
