Create a filter for his messages with the action "Send Auto reply", you can find that if you scroll down at the actions tab in the sorting office. You can click on the template button next to the option to create a 'bounce message' to your liking. Depending on the knowledge of your unwanted correspondent, it might be a nice touch to put his own address in the reply-to header of your bounces, so any complaints he intends to send to the bouncing address are being sent to his own address. To prevent repercussions from your ISP, you could use Postmaster <youraddress@yourISP> as sender info. Most clients will show that as: Postmaster Especially combined with the reply-to option, this will discourage most non-techies from continuing their correspondence. The more knowledgeable will see through this, but they'll notice a fake bounce anyhow. Note that this won't do you any good against spam.
