I have considered that as an option, but I want to do things in as few
places as possible. I can set account templates once and they get
inherited by every folder in that account.

If I folder templates could be inherited by subfolders, it would solve
my problem, but they can't.

Yes that is the sort of thing I want to do. The templates would set
different signatures, different organisation and customise the from
address as you do
