If they have Acrobat Pro 7.0, they really have a very good tool for (light) editing any pdf file. Using the editing tools on the Advance Editing toolbar, they can select either objects or text. For changing the appearance of the text, right-click on the selected text and select the properties option. From the dialog box that appears, you can edit the format properties of the text.
I have done some pretty fancy pdf editing using these tools in Acrobat 7.0, but it can be cumbersome if the editing is extensive.
