You shouldn't even have to use a JoomlaPack backup. They hacked the PHP code, not the database. If you delete the files and re-install Joomla - then upgrade immediately - the web site should come back.

When I think of it I run JoomlaPack and then save the resulting backup locally on a different machine. In a worse case then you just need to wipe everything clean, drop the mysql dbs, start fresh. Recreate the dbs, upload the full install of whatever version you were running (I'm running 1.5.20), install joomlapack and then you should be able to recover everything (but I have not tried that before.)
