I am running about 14 VMs split over one Dell P710 (VMWare Server) and another test box (ESXi) - the test (old beige) box managed to install ESXi even though it is very picky about hardware.
I have done a lot of moving VMs from one to the other using the converter, straigh file copies, and the import-export of ESXi and VMWare server - all have worked in different scenarios depending on the need. Sometimes it is a matter of finding the right way to import a given virtual appliance, sometimes it is a matter of moving a VM from test to production. There are a few twists when it comes to virtual NICs when moving from ESXi to VMWare server but it is all workable. I/O intensive servers must be given careful consideration when virtualizing, regarding hardware requirements. I am still looking at setting up an Exchange server under VMWare for example - trying to figure out if that is even feasible with 120+ very heavy power-users.
