I'll second Evernote. It has been the perfect solution for switching back and forth among iPad & laptop (with access via iPhone a side benefit). One key detail to keep in mind is that for off-line access to notebooks, you need to upgrade to the paid Premium version. That's obviously not an issue when one can count on having Internet access everywhere one might want to use Evernote. I paid for the upgrade before leaving on a trip to Colorado.
