Basically make the program useable just using a keyboard. Use standard UI controls and make sure all is correctly labeled. In case of Mac OS X and/or iOS there is a lot information for developers on the Apple developer web pages on how to make an app accessible. Same applies to Microsoft Windows. Microsoft have created lots of info regarding this on MSDN or whatever the developer site is called these days.
