I myself am a student, but I did this project out of personal interest. Most of the knowledge required could be obtained through google and some of the documentation. However I find that documentation is hard to look through. Standard document recognition shouldn't be too hard provided the text is in a recognizable font. You would have to do some cleaning up of the image and pass that information to Tesseract which will convert it to text.
