Thank you José. Your project seems interesting too! We believe in open source and we are willing to study and learn a lot so the choose would be definitely Tesseract or Ocropus. We will test both of them but so far Tesseract seems to perform better in speed. Anyway, we still need to decypher a lot about its usage :).
