I noticed the same problem on my project. Difference between recognised text in iOS vs tesseract is huge like you have. Firstly I though that the problem is with version of Tesseract. In this github project you put link, the Tesseract library is of version 3.01, so I installed 3.02.02 version on iOS and the problem is the same. So I think there could be problem with UIImage* conversion by I don't have any other idea.
