Hi, Sounds like an interesting project to me!
Unfortunately Tesseract isn't the tool you want. OCR is about printed text, whereas recognition of handwritten manuscripts requires "handwriting recognition", a different kind of software. I'm afraid I don't know much about handwriting recognition, so you'll have to search for yourself. You could try using Tesseract with your manuscripts, but unless they are very neat and even and "clean" (in a way that's unlikely given how old I presume they are) you'd probably have better luck with a different tool.
