I doubt that I can help you. But I'd like to understand your question better. I don't know what you mean by "character contours." I put the phrase into Google didn't get anything that looked relevant. My understanding is that postscript fonts are in fact based on vectorized descriptions of shapes (as contrasted with bitmaps). That sounds like a :character contour" to me. Could the printer possibly be asking for you to use postscript fonts? Were you using postscript fonts? If so, for both the text AND music fonts? And did you embed the fonts in the pdf? I can imagine that if you did not embed the fonts, and if someone didn't have them installed, that when he viewed the pdf he might just see ordinary letters where music font characters are supposed to be.
As for editing pdf's, my understanding is that only limited text editing is possible, and no layout changes are possible at all. But I'm completely unfamiliar with Adobe Illustrator.
