Dosa remains crisp for around8 minutes post preparation. After thisDosa begins 
to get soggy and less crispy and loses taste by the second.

So keeping a Dosa prepared and in a shelf would mean serving a Dosa thatis cold 
and less crisp which takes away 80% of the taste.

Same for Poori. A Poori lasts for 8 minutes or so after which itsubsides and 
becomes less crispy and less tasty.

In roughly 8 minute s- the Dosa becomes soggy and loses the Crispness

Samosas are Deep Fried and have a Maida casing which is very thick , so a 
Samosa retains itscrispness for a longer time (Around 30 - 60 minutes or even 
upto 3 hours)

PLus a Deep Fried Samosa is very hot and the Potato Filling gets reallyhot and 
this causes the taste to suffer when eating a hot samosa.

Its tastier to eat a Samosaafter 30 - 45 minutes when the Samosa is cool enough 
but still crisp.

Yet after some time - the Samosa becomes less crispy, soggy andtasteless just 
like a Dosa but because this takes much longer - a Samosa can bemade and kept 
on display.

It is a function of the heat transfer mechanism.

First, let me state that whenthe liquid is finally hot the walls of the pot 
will also be hot.

A gas flame heats a pot at the bottom first, but the gasses from theflame 
travel up the sides too, heating them with very little delay via convective 
transfer.

An induction heater heats onlythe metal in close proximity to the coil in the 
stove top surface. Heat will also travel up the side walls by conduction in the 
metalwalls, but they are relatively thin so the resistance to heat transfer up 
along the walls isgreater than the resistance in the heavy bottom.

While the bottom is heating most of that energy is spent heating theliquid in 
direct contact with the bottom. As that liquid heatsit creates a convection 
current in the fluid, constantly bringing new coolliquid to the bottom of the 
pot.

That convection current serves to cool the side walls at a rate greaterthan the 
metallic conduction of heat up through the thin side walls.

The convection current in the liquid will generally rise in the middledue to 
lower friction losses, and sink at the walls.

Eventually when the liquid is all hot the wallswill also be hot but not as hot 
as the center current that is still rising.

You will see this same current pattern in a traditional gas heated pottoo, but 
the amount of heat imparted through gases at the wall is greater.

This convection is often called a rolling boil and will be obvious to 
anattentive observer.

It's not that no heat is transferred to the upper portion of thecontainer.

The induction heater heatsonly the base of the container while in case of a gas 
stove heat is transferred to the upper edge of the container by convection ( 
due toproducts of combustion rising upwards )

If you wait for sufficiently long time the induction heater too heatsthe upper 
edge of the container

attend marriages can be classified into 3 types

The close relations and friends of the bride and groom for whom its a must to 
attend the wedding

The not so close friends and relatives for whom the food is an incentive to 
attend the wedding and

The friends and relatives who attend the wedding only for the food.

Regarding your question, the people belonging to the first category willattend 
the wedding whether you serve food or not.

In the second category some may and some may not attend the wedding iffood is 
not served.

In the third category nobody may attend the wedding.

So the number of attendees will definitely be lower if most of yourinvitees 
belong to the second and third category.

Probably this would irritatea lot of malayalees, but my leastfavourite malayali 
food. Is “puttu”. Yes i hate puttu.

Its basically steamed rice cakes with coconut sprinkles.

I hate puttu because it feels like saw dust in my mouth. Its tastelessand dry

Usually puttu is eaten with mixing it with banana,pappadam or evensugar.(as if
