The reason I’m answering is theobvious benefit of eating this ancient grain. It’s comparable in nutrients tobrown rice except pearl barley has twice the fiber. Furthermore, Ilike the taste. The time to make this dish is also comparable to cooking wholegrains like brown rice. My first exposure was at a friend’s home when my wife and Iwere invited for dinner.
