Re your query, one explanation I have heard is that
It is a symbolic way of saying that I will be with you, like a rock, through 
thick and thin, rain or shine, fortune or misfortune, unwavering in my support 
- Ammi was chosen as a symbol to show however much you subject it to grinding, 
pounding etc. it stays rock solid - like that I will stay with you.

home, though we seldom use them except when there is failure of electricity 
supply for the power grinders.  We left the ezhunthiram at home in India, as we 
did the ulakkais with which we pounded rice and other grains into powder on the 
aattukkal.  We used different ulakkais for grinding turmeric and dried pepper.
We only saw thoikkum-kal, or stones for beating clothes to clean them, at the 
riverside or edges of ponds, where washermen took their collected laundry.  The 
stones were broad, and largely sloped so that the dirty water fell back into 
the river or pond.
