I think it was a case of wanting to start over from scratch completely. With no fleet in orbit or parked on the planet, it would have been harder for an evil Cylon fleet to identify them as the Galactica humans. If they hadn't kept all the technology on New Caprica a few years ago, the Cylons may not have figured out it was them.
