So, once I power up Windows 7 vm that has been configured to use 1GB

the total 2GB, both my guest and host machine has performance
issues. Same
for Linux Mint. That is why I want to triple boot so that once I
boot into
my choice of OS I have the full 2GB of memory at my disposal in that
OS.
Maybe some day I will win the lottery and can buy a new i7 iMac and
a i7
MacBook Pro.

I already had Windows 7 installed on my MacBook using Boot Camp. I
installed that rEFIt utility and it rocks. Today I decided to
install
Linux Mint 9 as my Linux partition. So far, so good.
