Yes, for a sheet feeder the physical requirements (such as: 
does it feed each sheet through cleanly, generally without 
taking doubles?) are more important than the software 
requirements.  ScanSnap works pretty well physically.  In 
software, you definitely have to "work their way" rather than
whatever "your way" might be.

For flatbed I still have an Epson Perfection 4800 connected by
Firewire to an old Win2K machine.  Works great.  But mileage 
varies with newer systems so far as some Firewire facilities 
(and I'm talking about DV) go.  Would probably be overkill 
anyway.
