functionality on a model that isnt connected to a database.

I think overriding Model::create() is not the solution. If you look at
DataSource::describe() you will see that it can return null. And as the
result of this method is returned by Model::schema() in some cases, it
also means this method can return null. So in the end this means you have
to be aware that Model::schema() can return null and so this method has to
be used accordingly.
