You missed an important step. After editing the Site Title tiddler, you need to close the tiddler (click on 'done') before you save your changes. If you leave a tiddler open, the changes you make to it don't really 'take'.
And the package is amazing. There's just a bit of a learning curve. Luckily, the support here is excellent. Just keep at it.
